You may be wondering why I posted a cookie recipe on my blog site! No I am not changing to a cooking blog! I am a chocoholic and love chocolate chip cookies. I grew up as a kid with my mom making chocolate chip cookies and I loved them so much! My wife has carried on that tradition with a recipe of her own that is great! BUT…one day I mentioned in the office that I loved chocolate chip cookies and Kelly, one of our ministry assistants, blurted out she had a great recipe for me to try. Thus came Kelly’s chocolate malted cookies!
So, for fun, i am giving away the recipe for Kelly’s cookies so everyone can enjoy them. Warning: they are FULL of chocolate and you will crave them once you start cooking them.
Kelly’s Chocolate Malted Cookies
1 cup butter flavored shortening
1 1/4 cup packed brown sugar
1/2 cup malted vanilla milk powder (not chocolate)
2 tablespoons chocolate syrup
1 tablespoon vanilla extract (or so)
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chunks (oh yeah)
1 cup 6oz mild chocolate chips
Always make sure you have all the ingredients BEFORE you start or you have to make a run to HEB in the middle of your cooking. In a mixing bowl, combine the first 5 ingredients; beat for 2 minutes. Add the egg. Combine the flour, baking soda and salt; gradually add to the creamed mixture, mixing well after each addition. Stir in the chocolate chunks and chips. Shape into 2 inch balls; place 3 inches apart on un-greased baking sheet. Bake at 375 degrees for 12-14 minutes or until golden brown. Cool for 2 minutes before removing to a wire rack. Makes about 18 cookies.
My personal note: It is a sin to over bake chocolate chip cookies making them crisp. They should always be chewy. I use a convection oven and bake for 8-9 minutes only. Pull em out when they look golden brown, not a minute longer.
